- 3 tbsp sweetener (for topping)
- 1 tsp vanilla extract (for topping)

Instructions
- Preheat your oven to 320°F (160°C) and line a 9×9-inch pan with parchment paper.
- In a bowl, combine almond flour, sweetener, cocoa powder, and salt.
- Add melted butter and vanilla; mix until resembling fine sand.
- Press the mixture into the bottom of the pan and bake for 15 minutes.
- For pudding, sprinkle gelatin over 1/4 cup of heavy cream and set aside.
- In a saucepan, heat remaining heavy cream, sweetener, cocoa powder, and salt over medium-low heat; stir for 5 minutes until simmering.
- Stir in vanilla extract and bloomed gelatin; cool, then refrigerate for at least 30 minutes.
- For cheesecake layer, beat cream cheese and sweetener until creamy; add heavy cream and mix until smooth.
- Spread cheesecake over cooled crust and refrigerate to set.
- Whip cream, sweetener, and vanilla until stiff peaks form.
- Spread chocolate pudding over cheesecake layer, then top with whipped cream; refrigerate for at least one hour before serving.

Allow layers to chill for the best texture and presentation. Avoid overmixing the cream cheese to maintain a smooth consistency.
